For those with egg allergies, there are many ways to replace an egg in traditional baking recipes. The following are just some of the ideas that have been tried and proven to work:
1. 1/2 a banana, mashed. Add 25%-50% more baking powder then the recipe calls for
2. 1/4c applesauce. Add 25%-50% more baking powder than the recipe calls for
3. 1tbsp ground flax seed + 3tbsp warm water
4. 1 1/2 tsp Ener-G Egg Replacer + 2tbsp warm water
I have also had good luck using Ener-G Egg Replacer as an egg wash.
